Crispy Lemon Mustard Penne Bake
Selo Olive Oil
2 cups cooked diced potatoes
2 tbsp honey
2 tbsp Croatian olive oil
1 tbsp mustard
1 lemon (zest and juice)
Salt and pepper to taste
1/4 cup water (or more as needed)
Cooked pasta of your choice
1 lb penne pasta, cooked and drained
2 cups of the sauce made earlier
2 tbsp Croatian olive
1 onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 green bell pepper, diced
1/2 cup grated Parmesan cheese
1/2 cup panko breadcrumbs
In a blender or food processor, combine the cooked diced potatoes, honey, mustard, lemon zest, lemon juice, olive oil, salt, and pepper. Blend until smooth.
