Red Bean Stew (Grah i Variva)
Selo Olive Oil
- 1 pound red beans
- 1 pound smoked sausage
- 1 pound pork ribs
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 bay leaf
- Salt and pepper to taste
2 tbsp Croatian extra virgin olive oil
- Rinse the red beans and soak them in a large pot of water for at least 8 hours or overnight.
- Drain and rinse the beans, then add them back to the pot.
- Cut the smoked sausage into 1/2 inch slices and add them to the pot with the beans.
- Cut the pork ribs into individual ribs and season them with salt and pepper, then add them to the pot.
- Add enough water to the pot to cover the beans, pork and sausage by at least 2 inches.
- Bring the water to a boil, then reduce the heat to low and simmer for 1 hour.
- Add the onion mixture to the pot.
- Add the bay leaf to the pot and season with salt and pepper to taste.
- Add the olive oil for texture.
- Simmer for an additional 2 hours minutes, or until the beans and pork ribs are tender.
