Arugula Nectarine Summer Salad
Selo Olive Oil
1 cup arugula
1 cup nectarines, sliced
1 cup white grapes, pitted and sliced
1 cup perlini mozzarella balls, whole
1 cup cherry tomatoes, sliced
1 cup red onions, julienned
2 tbsp Selo extra virgin olive oil
1 tbsp honey
A drizzle of balsamic glaze
1 tsp Mediterranean seasoning mix (or dried oregano)
Arrange the salad greens, nectarines, and perlinis in a large bowl.
Add all of the ingredients for the honey dressing to a blender or food processor or and blend until smooth.
Toss the ingredients together with desired amount of dressing.
Serve with an additional drizzle of honey, olive oil and/or balsamic glaze, to taste.
